Clark Education City's Certificate III Food Processing (Retail Baking) is designed for those wanting to pursue a Baking career offering skills in bread production, pastry production, cake and cookie production,occupational health, safety, hygiene and environmental practices; providing technical advice and providing support to a team. Combines industry relevant learning and assessment strategies, guiding students in developing a  competitive advantage for success.

Course Outline

OCCUPATIONAL HEALTH AND SAFETY
Monitor the implementation of occupational health and safety policies and procedures
Monitor the implementation of quality and food safety programs

WORKPLACE ADMINISTRATION
Control and order stock
Present and apply workplace information
Use basic mathematical concepts

BREAD PRODUCTION
Produce bread dough
Produce yeast-raised products
Scale and mould dough for intermediate proof
Conduct final mould and final proof
Bake bread
Produce astisan breads
Diagnose and respond to product and process faults (Bread)

PASTRY PRODUCTION
Produce pastry
Prepare fillings
Bake pastry goods
Form and fill pastry products

CAKE AND COOKIE PRODUCTION
Produce sponge, cakes and cookie batter
Bake sponges, cakes and cookies
Decorate cakes and cookies
Diagnose and respond to product and process faults (pastry, cake and cookies)

CLEANING AND SANITATION
Operate automated washing equipment
Clean and sanitize equipment
